Foodie Friday – Butterfinger Bites Cookie Pops

Butterfinger Bites Pops 2.

These fun and yummy treats are easy to make – and they will disappear really fast, so you may want to double (or triple) the recipe!

Butterfinger Bites Cookie Pops

Ingredients:

  • 1 package (16.5 ounces)  NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough
  • 12 wooden craft sticks
  • 1/2 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 1 tablespoon creamy peanut butter
  • Assorted NESTLÉ BUTTERFINGER BITES, CRUNCH and BABY RUTH Candy Bars, chopped

Directions:

Preheat oven to 350° F.

Break dough along pre-scored lines. Roll 2 squares into a ball. Place six balls about 3 inches apart onto ungreased baking sheet. Insert sticks into each ball to resemble a lollipop; flatten dough slightly.

Bake for 12 to 14 minutes or until golden. Cool on baking sheets for 2 minutes; gently remove to wire racks to cool completely.

Microwave morsels and peanut butter in small, microwave-safe bowl on HIGH (100%) power for 30 seconds; stir. Microwave at additional 10-second intervals, stirring until smooth.

Spread about 1 teaspoon chocolate mixture over each pop. Sprinkle each pop with chopped candy bars. Refrigerate for about 15 minutes or until chocolate has set.

Foodie Friday – “Crack” Pie

Sold at Momofuku Bakery & Milk Bar in Manhattan, this pie has taken New York City by storm – out-of-town demand is so high that the bakery ships the pie by FedEx. Why not try making this for that special woman in your life this Mother’s Day?

Crack Pie is a twist on Chess Pie — an old-school dessert found in the “Joy of Cooking,” popular because it can be made with common pantry ingredients such as butter, eggs, sugar and vanilla.

The crust is rustic and unrefined — don’t bother trying to get a perfect edge as you press it into the pie plate. It isn’t going to happen.

The pie is baked at 350 degrees for 15 minutes, and then 325 degrees for about 10 minutes, just until the top is golden brown. The interior will jiggle when you remove it from the oven.

You will fear that the pie is undercooked.
But you must have faith.

It’s not an understatement to say that this pie defies description. It’s ooey-gooey. Buttery and rich. Silky. Pillowy. It’s not like any pie you’ve ever had before because that salty-sweet-crunchy-oaty crust is as much a part of the pie as the filling itself.

Cinco de Mayo – Chili Pepper Brownies

Since I missed doing a “Foodie Friday” post last week, I thought I would combine a recipe with a post which celebrates Cinco de Mayo. I’m not sure WHY we celebrate Cinco de Mayo, other than to have an excuse to drink a lot of beer and/or tequila – and since we don’t drink beer or tequila at the Koch Casa, it’s just another day around here….

I haven’t actually tried this recipe myself, as Paul and I don’t really like spicy things, but I’ve been told that lots of people like the extra “zing” that chili peppers add to the taste of chocolate. This recipe looked intriguing, so I thought I would share it with you – if you don’t have to eat gluten-free, just use regular all-purpose flour and omit the xanthan gum and salt:

Remembering Charlie

Way back in 1979, I had the honor of meeting a man who came to mean a lot to me over the next 34 years.  I had just started seeing a fella who very quickly asked me to spend the rest of his life with him (I said “Yes” before he could change his mind); not long after that, he took me home to introduce me to his parents.

And that’s when I met Charles Henry Koch.
