I don’t remember where I originally found this recipe, but this very quickly became one of our family’s favorites – it’s sinfully easy to make, and oh, so delicious:

1 egg
3 tablespoons mayonnaise
4 teaspoons lemon juice
1/8 teaspoon red pepper flakes
1 teaspoon dried tarragon

1 tablespoon minced green onions
8 ounces crabmeat
1/2 cup crushed RitzTM crackers***
Butter

1. | In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and scallions. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved. |
2. | Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side. Serve with your favorite sauce, if desired. |

***I had to tweak this recipe a little bit when we started eating gluten-free (I replaced the cracker crumbs with GF bread crumbs). And I always have to double the recipe. ALWAYS.
Adjust the seasonings to your family’s tastes – I predict this will be one of your family’s favorites as well!

Almost the same as my recipe except I do not use any bread or crackers.
With the price of crab it looks like it will be a while before we have it again.

Hmmm, this also looks sinfully delicious! I haven’t checked out the price of crabs lately, as my son won’t eat them, and I am not a fan of cooking two meals. However, he just graduated so I’m more often flying solo for dinner. So possibly this is in my future 🙂
